Cinta Senese - a real delicacy! (marinated in olive oil with herbs and spices)
This roasted chine of pork, marinated in olive oil is a real tradition in Tuscany
predominantly around the hills of Pisa. We have sourced this delicacy from a small
farm who specialise in breeding pigs and Cinta Senese (a ancient kind of black pig
typical of the area around Siena). They are kept in their natural habitats in the
woods around Cecina.
